Gluten Free Guacamole

Following on from the Quesadillas recipe, here's the guacamole that always accompanies it.

1 ripe Avocado
1 tablespoon Fresh Lemon Juice
1 teaspoon Fresh Lime Juice
Generous pinch of Sea Salt

You can either use a mini whizzy choppy thing or mash it with a fork. If you do opt for mashing it, use a container with a flat bottom, not a bowl, it's much easier.
  • Cut the avocado in half and remove the pit (carefully hit the pit with a sharp knife and twist)
  • Spoon out the avocado flesh
  • Add the fresh lemon, lime juice and salt
  • Whizz or mash
  • Done!
