Scallops Are Naturally Gluten Free

You may be thinking, but I haven't got a fishmonger near me, doesn't matter. These days UK supermarkets are getting increasingly good on the fish and shellfish front, there's some really good counters in Asda, Sainsbury's, Morrisons, Tesco and Waitrose. That scallop in the photo is from a Tesco fish counter, I always prefer to buy them on the shells rather than loose as you get the whole scallop, when they're loose they usually have the roe taken off.

There are many things you can do with scallops, they're great in fish pie, fried with bacon, in Coquille St Jacques or in this instance, covered with a breadcrumb mix and put under the grill.

Whether you buy them on the shell or loose they're really easy to clean and prepare.
  •  If they're on shells, carefully take a sharp knife and slice through the scallop meat attached to the shell.
  • Wash with cold water and check for any darker vein-like skin around the edges, if you find any simply peel it away carefully so you don't damage the scallop meat
All I did for a light lunch was clean my scallops and make a breadcrumb mix, it's ridiculously easy!
  • Place a slightly heaped tablespoon of gluten free breadcrumbs into a container, use a tablespoon per scallop
  • Add a decent knob of butter (I use garlic butter ready made, so lazy I know!)
  • Chop up a handful of fresh parsley and add to the mix
  • Mash with a fork so that the butter goes soft and the mix is even
  • Spoon a tablespoon of the breadcrumb mix over the scallop making sure that you've covered it well

So Easy!
  •  Pop under a hot grill for 5 minutes
  • Done!

 I didn't on this occasion, but it's always nice to add a bit of grated cheese too.

How easy was that?! Naturally gluten free scallops from start to finish in just over five minutes!

Shellfish made super simple!
