Oriental Style Bacon Bomb
Yes, I know, another one?! I did warn you in a previous post. If you don't like really rich flavours don't go any further with this. If you're a fan of oyster sauce, you'll love it!

Ingredients:

250g Pork Mince
12 Rashers Streaky Bacon
4 Spring Onions
Large handful Shiitake Mushrooms
9 tablespoons Tamari Soy Sauce
5 tablespoons Mirin
1 teaspoon Garlic Powder
1/2 teaspoon ground Ginger
2-3 tablespoons Oyster Sauce
1 tablespoon Sugar

Directions:
  • Preheat your oven to 200C
  • Slice the spring onions and shiitake mushrooms

  • Put the pork mince into a container and mash with a fork until the strands have broken down
  • Add the spring onions, soy sauce, mirin, ginger and garlic and mix evenly
  • Put into the fridge until needed
  • Make the bacon weave (detailed instructions in that link)
  • Pour the oyster sauce onto the bacon weave and spoon over the surface

  • Take your pork mixture from the fridge and mold into a loaf type shape, place in the middle of the mushroom layer
  • Take hold of the top of the cling film and pull upwards, then towards you
  • Roll so that your bacon bomb is encased
  • Sprinkle the sugar over the bacon bomb and pat it in with your hands

  • Tuck any loose edges underneath
  • Transfer to a baking dish and put into the oven
  • Cook for 35-40 minutes
As you may or may not have noticed, I forgot to put cling film onto the chopping board before I made my bacon weave. This meant that rolling the bomb was much harder than the previous attempt and so I ended up having some of the pork mixture left over as I couldn't fit it in. I figured I would use it anyway so I dropped spoonfuls of it into the baking dish and ended up with rather lovely oriental style meatballs.

If you don't like strong flavours then this isn't the dish for you, but if you're down with all those incredible oriental ingredients give this a try, it's something out of the ordinary and best of all, totally gluten free.

Happy Tuesday!
