Cheese And Onion Goodness |
In an effort to not replicate my original
Cheese Straws I've been really inventive in thinking up alternate shapes and sizes for my various Cheese Bites. As you can see I've gone wild making some Triangles and previously I even went as far as
Twists! You may have seen them. My visual creativity knows no bounds.
Have to say, these are really, really lovely. A perfect balance between the cheese and onion with a soft and light texture that almost melts in the mouth. Very moreish.

To make around 24 depending on size.
Ingredients:
100g Doves Farm Plain Flour
25g Butter (room temperature)
1 Large Egg
1 Slightly Heaped Teaspoon Xanthan Gum
1 Small Onion
100g Manchego
30g Gruyere
Pinch of Sea Salt
Oil For Greasing The Baking Tray (groundnut or corn are ideal, minimum flavour)
Directions:
- Cut the butter into cubes and put into a bowl
- Add the flour, rub that and the butter between your fingers until you get a breadcrumb type consistency

- Break an egg into a bowl, add salt and whisk
- Add to the butter and flour

Wet And Dry Mix |
- Use a spoon to mix together to form a paste
|
The Glutenite's Manly Spoon |
- Peel and finely chop the onion
|
No Tears |
- Heat a frying pan on high, add the oil then cook the onion until soft, stirring occasionally
|
Sweetness To Compliment The Cheese |
- Drain on a couple of sheets of paper towel to remove excess oil
|
Unwanted Grease Be Gone |
- Add the cheese to the butter, flour and egg paste
|
Spot The Spoon |

Going To Be Yum |
- Use your hands to mix all the ingredients into a smooth ball of dough
- Leave to rest for 10 minutes
- Preheat the oven to 180C (200 non fan ovens)

It's going To Taste So Good |
- Flour (GF) a chopping board and roll out until 5mm thick
|
Rough Roll |
- Smooth the edges by pressing into the dough with a pastry scraper
|
Quite Neat For Me |
- Use the pastry scraper to cut the triangles
|
Bit Random, Like Me |
- When you've cut all the triangles grease a baking tray
- Use the pastry scraper to lift the triangles from the chopping board
- Place onto the baking tray

Just Out Of The Oven |
I love these, I used to get something very similar in taste from a bakery when I was at school and full of gluten. Cheese and Onion works so well together, you really can't go wrong with these if you like both of those ingredients.
That's it for my latest baking efforts, I do intend to do more but it's utter temptation that I could do without. I can't resist savoury baked goods.
