Lemon Chicken With Egg Fried Rice |
It pretty simple to make and though they may not be the best examples of photographic skill, there's a step by step guide of photos to make it even easier.
Plenty for 2 people if served with gluten free Egg Fried Rice.
Ingredients:
1 large Chicken Breast
2 large Eggs
1 tablespoon Tamari Soy Sauce
1 tablespoon Rice Wine Vinegar
Zest of 1 Lemon
Juice of one Lemon
Juice of one Lemon
Corn Flour (Masa Harina)
Corn Oil for frying
Pinch of Salt
Directions:
- Prepare your chicken breast by trimming any excess fat or nasty bits off
- Put into a food bag, place on a flat surface and hit until flat and even, around 2cm thick. I use a rolling pin for this

- Get a flat container just bigger than the chicken breast and break the eggs into it
- Zest the lemon straight into the egg mix, add the soy sauce, rice wine vinegar lemon juice and salt and mix thoroughly

- Add the chicken to the egg mix and cover completely

- Let the chicken sit in the egg mix for about 20 minutes minimum
- In another flat container put enough corn flour to coat one side of the chicken
- Put the chicken onto the flour and pour over enough to cover the top. Pat the flour into the chicken and make sure it's fully covered
- Heat a shallow pan of oil until very hot then add the chicken

- Serve with gluten free egg fried rice (recipe link is at the top)

The sauce for this is a funny one as I just can't replicate the colour that you get from restaurants and take aways, it tastes much the same though. I can't give exact measurements for this as I did it by instinct and couldn't note it down due to so many tweaks, but you can't go much wrong with this as a guide.

Lemon Chicken Sauce:
400ml water
Juice of half a lemon
2 tablespoons Honey
1 tablespoon sugar
Put it all into a pan and bring to the boil, once reduced serve. This isn't meant to be a thick sauce, it's actually very runny and intended for dipping. The sauce you see on the first photo of this post has a somewhat thicker more tangy sauce that I wasn't happy with, so I made a few changes and it worked out great.
So there you have it, pretty authentic Chinese Lemon Chicken. No gluten!
