Gluten Free Crustless Quiche

I used to be a big fan of regular quiche but these days a crustless one will do just fine thank you very much. I really cannot be bothered faffing about making gluten free pastry, nor can I have pre-made ones on the market as to the best of my knowledge their PPM's are too high. Not a problem though.

For a really quick and simple meal this is a winner.


For 2 people as a light meal.

Ingredients:

2 Eggs
2 tablespoons Sour Cream
1 smoked Bacon Steak
Handful of mushrooms
1 small Onion
Handful of Gouda Cubes
Pinch of salt
Cooking oil

Directions:
  • Heat the oven to 165C
  • Dice the onions and slice the mushrooms
  • Cut the bacon steak into decent chunks, cut the gouda into cubes
  • Break the eggs into your quiche dish add the salt and mix, add the sour cream and mix thoroughly
  • Heat a pan on high add the oil and fry the onions, when the onions look soft add the mushrooms and bacon
  • This should take 5 minutes maximum
  • Add the onions, mushrooms, bacon and cheese to the egg mix
  • Arrange so that you get an even filling
  • Put the crustless quiche into the oven for 20 minutes or until the middle has fully risen
You'll be surprised at how much flavour this has from such simple ingredients. It's a cheap and easy gluten free meal that's easily adaptable for your personal tastes (or for what you have in your fridge!). For a more substantial meal chips work great with this.

If you're one of my regular readers, sorry for the absence. Aside from my rants about PPM and bad customer service, I like to try and keep Free From G upbeat, it's not been an upbeat time for me recently. Usual weekday posts have resumed though :)
