Homemade Thai Green Curry Paste |
Here's an old favourite that we only just got around to documenting; Thai Green Curry Paste with the
Curry recipe to follow.
This paste does require quite a few ingredients but the resulting flavours are amazing. We make up a big batch and freeze in individual portions, it doesn't take long to do.
This recipe will make 8 portions of Thai Green Curry Paste, so that's 8 meals for 2 to 4 people each time.
Ingredients:
4 Medium Heat Chillies
3 Lemongrass Stems
4cm Square of Fresh Ginger
6 Large Garlic Cloves
4 Shallots
4 Kaffir Lime Leaves
1 Teaspoon Shrimp Paste
1 Teaspoon Ground Coriander
1 Teaspoon Cumin
1 Teaspoon Paprika
1 Large Bunch of Fresh Coriander
1 Bunch Fresh Basil
2 Tablespoons Olive Oil
Zest and Juice of 2 Limes
The beauty of making this from scratch is the freshness, plus you know for sure that you're getting a Thai Green Curry Paste that is totally gluten free. You'll need a mixer of some description to make it, our
mini Kenwood chopper
in the above photo works great as you can see.
Directions:

Basil and Coriander |
- Check the basil and coriander for any wilted leaves or nasties

Garlic and Lemongrass |
- Peel the garlic and slice the ends off of the lemongrass
- Peel off the outer layer of the lemongrass, cut the remaining into smaller pieces

Fresh Herbs, Garlic and Lemongrass |

Medium Heat Chillies |
- Cut the top off the chillies and deseed if preferred (leaving the seeds in will make the curry paste hotter)

We Deseeded |
- Peel the ginger and cut into smaller pieces

Fresh Ginger |
- Peel the shallots and cut in half
- Put all prepped ingredients into a mixer and add the shrimp paste, olive oil, ground coriander, cumin, paprika and lime leaves

- Grate the lime zest directly into the mixer
- Cut in half and juice, put the juice in the mixer
- Mix together until it becomes a smooth paste
- Transfer the Thai green curry paste into a container

- Divide into 8 portions
- Scoop into food bags to freeze

Just pop them into the freezer and use straight from the bag when you need them, you don't need to defrost.
We didn't actually have any ground coriander so we used coriander seeds and ground them ourselves, well, my Glutenite did and a great job he did too.

So that's how to make a delicious gluten free Thai Green Curry Paste from scratch.There's not much prep needed and the mixer does all the hard work so it's definitely worth taking a little time to make.
