These were bought on Friday and devoured by Monday evening, my waistline is unhappy with me as is my mouth. One's saying What Did You Do?! The other, Feed Me More! It's going to be a battle, that's how good these cookies are.
I actually bought these to make a cheesecake base, I'm not one for making desserts but I figured I would give it a go. They're gone, no cheesecake made just utter piglet indulgence on my part. No idea why but I've been getting incredibly hungry late at night recently, these cookies did not help matters.

It hasn't worked.
What makes these ginger cookies so moreish for me is the crystallised ginger, it's chewy and sweet and, well, just very, very lovely to eat. The texture of these cookies isn't crumbly at all, that's why it's so hard to detect anything gluten free about them.
I had a bit of a panic after I'd eaten the first one though.

If you're a fan of Ginger Nuts but need a gluten free version, these are even better. I've always enjoyed the odd biscuit or cookie but usually chocolate is somehow involved. I can honestly say that these are the best biscuits / cookies that I've ever eaten.
