Gluten Free Club Sandwich

We had this down as a meal for last week but we used up all the bread before it could be made. 3 loaves this week and we're already out again, it's just so good. I wish you could see the actual beauty of this sandwich but as we reasoned last night, we just don't have the space to take great photographs. I'd love a dedicated area to do so, to get really creative, but were you to see the size of our kitchen and the amount of equipment it contains (a lot) you would be quite impressed that I manage to create recipes at all in that space.

One day I'll have a kitchen suitable for preparing feasts to be photographed, until then you'll have to put up with my shoddy snaps in my little kitchen more suited to microwaving ready meals (I still love it though).


I wasn't responsible for putting the sandwiches together - The Glutenite did that - I doubt they would have looked as 'just so' had I been in charge.

Mine was tomatoless because I couldn't be bothered to skin them (was ravenous).

Ingredients for 2 gluten free Club Sandwiches:

6 Slices of DS Gluten Free Seeded Bread
1 Chicken Breast
2 Rashers Streaky Smoked Bacon
2 Dairylea Cheese Slices
1 Large Vine Tomato
Round Lettuce Leaves
Pinch of dried Tarragon / Parsley / Sea Salt
Hellman's Mayo

There's not much to making a sandwich is there? So I won't give directions like I usually do on recipes I'll just tell you that I fried the Bacon until it had a good colour and that the Chicken was brined for a few hours, then poached, shredded and seasoned with the herbs and salt. Instead of using butter The Glutenite spread each slice of toasted bread with mayo.

We did the cocktail stick thing and the sandwiches sliced beautifully, I cannot rate that bread enough.

Oh, and the Crisps are homemade.

Seeing as it's Valentines Day tomorrow and I have nothing remotely Valentiney to post, have a look at my Sriracha Chocolate Hearts that I made a while back. Or not, you know, you don't have to.
