I did that day in day out for so many years. Take a look at the recipe page for yummy examples, pretty much all from scratch.
So what an absolute pleasure it is these days to have convenience back! I'd love to focus on some more accessible recipes, really easy stuff that doesn't require a ton of ingredients or effort but still tastes loverly.
If you make this, you're in for a bit of a treat. I honestly haven't stopped wanting to eat this every meal since we had it on Monday.

Ingredients:
Leftover Chicken (2 home smoked thighs/legs here)
Half a box of Mushrooms
1 Tin of Amy's Cream of Mushroom Soup
1 Jus-Rol Gluten Free Puff Pastry Sheet
1 Teaspoon Dried Tarragon
Big Pinch of Smoked Salt (you can use any)
1 Egg
This is ridiculously easy for something so good.
- Pre-heat the oven (think it's 200C for a fan oven 220C other but it says on the box)
- So I pulled the chicken off the bones, made into bite sized pieces and put to one side.
- I sliced the mushrooms about 5/6mm thick
- Put the soup into a saucepan and heat on medium high, add the mushrooms, let simmer gently
- Put the pastry onto a baking sheet and Egg wash, put into the oven and cook for 12 minutes (you know your oven, might differ. Mine's crap)
- When the pastry has about 4 minutes left, add the chicken to the mushroom soup and stir
- At this stage I added tarragon and salt as it was slightly lacking flavour
- Put the filling into a bowl and either put the pastry sheet on top or cut it up into pieces like we did
- Deconstructed Chicken and Mushroom pie!

If you wanted to be a bit more fancy and from scratch you could always make the Cream of Mushroom Soup. That's a gorgeous recipe if I do say so myself but for now I'll be sticking with Amy's in a tin. I really have got lazy but this convenience is such a novelty!
