Gluten Free Chicken Teriyaki

I made this to go with Egg Drop Soup to make sure that The Glutenite would have enough to eat, just one portion but it turned out so delicious I thought that I may as well share.

I absolutely love cooking Japanese food, the flavours are my favourites of any cuisine. This is really quick and simple but so, so good.


To make a portion as seen in the photo.

Ingredients:

1 Chicken Breast
3 Tablespoons Tamari Soy Sauce
1 Tablespoon Honey
2 Tablespoons Mirin
1 Teaspoon Fresh Ginger
1 Large Garlic Clove
1 Teaspoon Sesame Oil

Directions:
  • Put the tamari soy sauce, honey, mirin and sesame oil into a bowl
  • Peel and mince the garlic, add
  • Peel and great the ginger, add
  • Stir together
  • Cut the chicken breast into roughly 1" squared pieces
  • Add to the marinade and mix until completely covered

  • Leave to marinate for 15 minutes
  • If using wooden, soak your skewer(s) in cold water for a minute or so
  • Preheat your grill to 225C
  • Thread the chicken pieces onto the skewer(s)
  • Put your skewer(s) onto a foil lined baking tray (or equivalent)
  • Pour half of the remaining marinade over the chicken

  • Grill for 3 1/2 minutes, then turn
  • Pour the other half of the marinade over the chicken
  • Grill for another 3 1/2 minutes
  • Serve with the foil collected sauce poured over
So easy but so delish.

There's enough marinade from the ingredients to coat 2 chicken breasts so just double up on your chicken to serve 2 portions, you don't need to increase quantities of anything else.

Back in the gluten days I would have used Sake in the marinade, I love Sake, it's such a good cooking ingredient. There are two kinds of Sake that I believe are gluten free - Gekkainkan (a traditional brand ) and Junmai (pure) - but I haven't seen either them to buy other than on specialist websites. Buying a case of Sake would not be a good idea because I might say that I love to cook with it but I love to drink it more. Warm Sake, yuuumm, love that fuzzy feeling.

In Free From G news, today we have been besieged by Ladybirds and there has been a home intrusion of at least four. It could have been dozens had we not noticed and closed the window pronto, I bloody hate insects.
