So yes, bit slack on the blogging front but time for a recipe to be shared.
I'm going to start of by saying it's possible that I could have made these a bit... tidier but they were dinner and I was really hungry, plus first time I've ever made them but I nailed it in terms of taste. Also, in case you hadn't noticed by now, presentation is not my strong point. I'm a bit haphazard.

Sesame Prawn Toast With Egg Fried Rice |
To Make 12 Prawn Toasts
Ingredients:
10 Raw King Prawns
4 Spring Onions (just the white and light green parts)
1 Teaspoon Sesame Oil
1 Tablespoon Tamari Soy Sauce
1 Tablespoon Fish Sauce (Squid Brand used here)
2 DS Gluten Free White Ciabattas
Sesame Seeds
Ground Nut Oil
Directions:
- Devein the prawns and roughly chop the spring onions
- Put the prawns, spring onions, sesame oil, soy sauce and fish sauce into a mixer and blitz until a smooth paste has formed

- Cut the ciabattas into 3 slices each then halve the slices by cutting diagonally across

- Spoon the prawn mixture onto the bread slices and spread evenly
Bit Of A Fiddly Job |
- Put a handful of sesame seeds onto a plate and dip each prawn toast into them, press the seeds into the prawn mix with your fingers

- Heat a large frying pan on high with enough oil to cover the bottom
- Place the prawn toasts sesame seed side down into the oil and shallow fry for 3 minutes
- Turn the prawn toasts over and cook for another 3 minutes

- Remove from the pan and put on kitchen paper to drain any excess oil
You could also deep fry these for around 2 minutes or until golden.
These were lovely and crisp on the outside with a soft prawn center, I'll definitely be making them again. If you're wondering why the recipe says for 12 when there are only 10 in the pan it's because I had a slice of ciabatta over due to using more topping on the first two than I needed, so I ran out.
Next time I make these I'm going to attempt a healthier option (shock horror, I know), I plan on grilling one side of the ciabatta slices then adding the prawn topping to the untoasted sides and then grilling those. See how it works out.
