Gluten Free Chicken Stock

Since being gluten free I have had to change the stock cubes or granules that I've been using about 3 times due to the recipe being changed and pepper being added. Can't remember the first but I used Kallo Chicken Stock Cubes for over a year, then one day I picked up a pack to put in the trolley and saw that the ingredients had changed. Pepper had been added.

I've been meaning to make these spare ribs for ages but for whatever reason I forgot to and was making the regular Barbecue Spare Ribs instead. Those ribs are good but these ribs are fantastic and just like what I used to order from my Chinese.

Homemade Gluten Free Crisps

I'm a bit tired of crisp flavours tasting so artificial, so as the oil was already heating on the hob to cook Calamari, I decided to do a quick experiment.

I washed and dried a potato, used a potato peeler to get slices, dried the pieces off with kitchen paper, then put the potato slices into the hot oil for a minute or so. Voila! Simply drain and add herbs or spices for your desired flavour. We went for chilli as we love a bit of heat.

The lovely peeps at Sakata sent me this colourful selection of their gluten free Rice Crackers to try, as I had only managed to source the Sour Cream and Chives flavour myself. Despite having a totally full tummy after a somewhat indulgent cheese fondue dinner, just thinking about how good the ones I had already tasted were meant that I couldn't help myself and opened one of the new flavours shortly after picking up my post.

Coeliac Tiredness

I don't recall a time in my life when I've ever been well rested because I've always had insomnia but recently the tiredness has been getting progressively worse. I haven't had any glutening episodes recently though I have been a bit run down due to chest problems, and I continue to have late nights which isn't smart but, well, that's just the way I am.

I found myself unexpectedly in a Waitrose whilst out and about today. I'd been wanting to get something new from there to try for ages, but my mind was totally blank, didn't have a clue what it was but I knew it was something I'd seen talked about on Twitter. Domino's Introducing Gluten Free Pizza In The UK

I've just read something that makes me feel quite uneasy. I've just seen that Domino's are looking to start selling gluten free pizzas if they can find a gluten free base supplier that can cope with the quantities needed. Why do I feel uneasy? Read this or just go look at the photo in the middle of it. Australian Domino's gluten free pizza comes with a disclaimer.

Something that has really helped me on my gluten free diet is meal planning. I don't mean being regimental about it, but by us planning meals on a Friday night in preparation for our Saturday shop, we rarely waste ingredients and are never stuck for what to eat.

I was reminded of this today when Channel 4 posted a link to the Top 10 Weirdest Foods on CDWM to Twitter. I remembered that there had been a guy on there who was a coeliac and if my memory serves me correctly, I couldn't believe how chilled out he was about eating other people's food.

The photo's a bit blurry but you get the idea. Updated photo! This was a discovery that I didn't mean to find but I'm so glad that I did. This barbecue sauce was originally a glaze for ribs, but due to time constraints I didn't get a chance to use it, once cooled it turned into a really lovely, rich barbecue sauce.

First off, though this recipe is complete, that photo isn't a true representation of how the ribs will look should you follow this recipe. Basically, they're missing their barbecue glaze, I'll explain why after the jump.

If you want a really refreshing drink then this has to be right up there. I've been drinking Vita Coco for a long time now and I definitely feel different for doing so. It kind of gives an instant boost when you drink it, you really feel as though you're putting something healthy into your body.

I'm having one of those days, so I thought I would post about something that always makes me smile, Haribo!

I found out very early on that most Haribo sweets are gluten free thanks to their (previously - see update below) very informative website. You are literally spoilt for choice when it comes to this brand. In that photo there's a mix of loads of different types of Haribo, you can probably make out the ghosts from the Spooky Ghosts selection (you may not know this, but I'm Halloween mad).

Actually, I'm not really doing much apart from frying the tortillas to dry them out, my OH is doing the hard tortilla work. We're making Quesadillas, so that's the tortillas from scratch, smoked chicken from scratch, vegetable filling and homemade guacamole
